Nothing too exciting has happened this week so far. I will hopefully get our Memorial Day update done soon which was from Thursday after work until Tuesday! I went back to work on Wednesday with nothing too exciting but catching up on emails and then today we had our first transfer orientation today so that broke the day up and I got to see some students I hadn't seen since school ended!
Tonight was my night to cook dinner and I could eat mexican food everyday and I was craving guacamole so I chose a very easy Quesidilla Casserole!
I found the recipe for Quesidilla Casserole when I was wondering around the grocery store one day aimlessly looking for stuff to buy. I stumbled upon the spice isle and found these awesome McCormick Recipe Inspirations. There are several different ones at our local grocery store but the Quesidilla Casserole is the only one I have tried so far.

It comes with premesured out spices that you will need
Then on the back is a recipe card for you to keep for the future!
I have always just bought a new package since they are only around $1 then I don't have to worry about making sure I have all the right spices.

I served the Quesidilla Casserole with tortilla chips, guacamole, and margaritas! Yum!
Also, if you like margaritas I wanted to share this recipe that one of my good friends gave me a few months ago and I will never make them any other way!
Perfect Margarita
1 shot Tequilla
1 shot Tripple Sec
1/2 shot Vodka
2 shots Sweet and Sour mix (must be Mr & Mrs T)
1/4 shot lime juice
pour all shots over ice and mix
1 shot= 1.5 oz
If you ever need a quick simple recipe I highly recommend the Quesidilla Casserole and Perfect Margarita!
